This simple and delicious Lemon cake recipe made with simple basic ingredients like all-purpose flour, butter, eggs, and 1/2 cup milk. Topped with the lemon glaze which is made from two basic ingredients (lemon zest, butter, confectioners sugar, and milk) anyone can bake this light and fluffy cake with minimal cooking experience and equipment, you just need an electric mixer or hand blender with the paddle attachment to prepare the flour mixture but this really optional, you can prepare the mixture with a hand whisk but it's a bit harder to get the cake batter ready. Bake time is just 20 mins at 180 deg C. Just follow the recipe or you can follow the video recipe as well.

 200 g All Purpose Flour
 100 g Butter
 185 g Powered Sugar
 1 tsp Baking Powder
 1 tbsp Vanilla Extract
 2 Eggs
 ½ cup Milk
 2 tbsp Lemon zest
 ½ tsp Salt
Ingredients For Glaze (Topping)
 ¼ cup Butter
 1 cup Powdered sugar
 2 tsp Lemon Juice or Zest

Preheat:

Preheat the oven to 350 degrees F. Grease and flour a 9x9 inch pan.

Mix wet ingredients:

In a large bowl, combine butter, sugar, egg, lemon zest and vanilla extract.

Mix dry ingredients:

In a medium bowl, combine flour, baking powder and salt.

Mix dry and wet ingredients together:

Gradually add the dry ingredients to the wet mixture and mix well with a spatula without any lumps.

Pour into pan:

Pour the Mix into the prepared pan and tap gently to remove any air bubbles.

Bake:

Bake for 30 to 35 minutes, or until firm.

Mix the Ingredients:

Bring the butter to room temperature and mix well
Mix gently with the powered sugar to a frothy creamy consistency
Add the lemon juice or lemon zest and mix well

Let the cake cool for 15 mins.
Gently spread the glaze on top of the cake and sprinkle toppings as you wish.

Notes:

  • If you are diet concious, you can substitute the sugar with Stevia Sweetener. Check here to buy high quality Stevia.
  • Putting a layer of lemon curd on a cake is a great idea and you can use my lemon curd recipe here. You can make sure that the cake cools enough to fill it when it looks stable, but not too much.
  • If you want to save some time, you can skip the buttercream part and buy the lemon glaze seperately.
  • You can even use melted butter or warm up your milk or sour cream a little if you like. If you see small lumps of butter mixing the wet ingredients, don't panic if you add the dry ingredients. Once you have a layer of moist inside, try using cake strips.
  • You can buy a set online, or you can make your own with foil or paper towels or buy them online and bake them in the oven.
  • If you don't want to make buttercream, you can cover the whole cake with mascarpone glaze, but it won't give you a smooth finish and a nice blob. I've written a whole blog post about it, so check it out if you're interested and you'll love the taste.

How to Store your Lemon Cake?

You can store the cake in a covered container at room temperature overnight or for up to one or two days in an airtight container in the refrigerator at room temperature. If you do this further in advance, cool it for at least an hour before serving or overnight in the fridge.

Make sure it comes out at room temperature because butter-based cakes will be hard at colder temperatures. If you are planning to make the cake later, then you can prepare and freeze the layers so that they pack well and store in an airtight container in the refrigerator for at least a week.
